A simple salad can take on a whole new flavor just by adding dressing.

1 small shallot, finely chopped
3 Tbsp fresh orange juice
2 Tbsp fresh lemon juice
1 Tbsp fresh lime juice
1/4 cup of white wine or white balsamic vinegar
1 tsp Dijon mustard
2 Tbsp honey
3/4 cup canola or other oil
Kosher salt and fresh ground black pepper to taste
Combine all ingredients in a small jar or shaker bottle. Shake to blend.
DO AHEAD: Vinaigrette can be made 1 week ahead. Cover and chill. Shake before using.
