The classic meatloaf is delicious on its own, but add some green chilis and you get a whole new flavor.

Green Chili Meatloaf
Meatloaf
2 tsp vegetable oil
1 onion, finely chopped
2 cloves garlic, minced
1 lb ground beef
1 lb ground pork
1 cup finely chopped roasted, stemmed, and seeded green chiles
2 eggs
½ cup quick oatmeal
2 tsp Worcestershire sauce
½ cup plain yogurt
1/2 tsp Mexican dried oregano
½ tsp ground cumin
Salt and freshly ground pepper
Sauce
2 cups sour cream
Zest and juice of 1 lime
½ cup chopped fresh cilantro
Pinch of salt
Preheat oven to 400 degrees.
To make the meatloaf, in a medium frying pan over medium-high heat, add oil. When oil shimmers, add onion and cook until translucent, about 5 min. Add garlic and cook until fragrant, about 30 seconds. Remove from heat and let cool.
In a large bowl, add beef, pork green chiles, eggs, oatmeal, Worcestershire sauce, yogurt, oregano, and cumin. Season liberally with salt and pepper and combine. Place in a 9” by 13” glass baking dish and bake until an instant-read thermometer registers 165 degrees, 45 min. to 1 hour.
Meanwhile, in a small bowl, add sour cream, lime, cilantro, and salt and stir to combine. Serve alongside meatloaf.
