Maria’s Asparagus Sauté

Maria’s Asparagus Sauté
½ lb sausage
2 cloves of garlic, chopped
1 cup onion chopped
1 cup tomatoes chopped
2 bunches of asparagus
Salt and pepper to taste


Remove the sausage from casings. Brown in a skillet and shop in to pieces. When browning is complete, drain fat. Add garlic and onion to sausage. Cook until tender. Then add chopped tomatoes heating thoroughly.

Cut asparagus into bite size pieces and add to sausage mixture. Cook untio tender and mix.

This recipe serves 8-10 as a side dish.

You may also use as a main dish over pasta or rice.

Variations: Spiced sausage or turkey sausage may be used in place of regular sausage.
