Marinara Sauce


1 carrot, finely diced
1 stalk celery, finely diced
1 small onion, finely diced
1/2 cup olive oil
3 garlic cloves, crushed
10 tomatoes, medium dice
2 cups chicken stock (or white wine)
2 Tbl. fresh basil, chopped
2 Tbl. fresh parsley, chopped
1 Tbl. rosemary
1/2 Tbl. oregano
salt and white pepper to taste


Place the first 5 ingredients in a large saucepan and cook over medium heat for 15 minutes. Add the tomatoes and chicken stock (or white wine) and cook for 30 min. Add the basil, parsley, rosemary, oregano, salt and white pepper and cook for one hour.

Serve over hot pasta and sprinkle with Parmesan cheese.

Option:

Saute 6 large shrimp in one Tbl. of olive oil over medium heat for 2 min. on each side. Then add 3/4 cup of marinara sauce and serve over hot pasta.
