The name says it all! This chicken dish is so delicious that it could inspire someone to pop the question.

Begin by prepping your chicken breasts. If they’re on the thicker side, use a sharp knife to slice them into two thinner pieces. This ensures even cooking and a tender result.

Marry Me Chicken pairs beautifully with pasta or mashed potatoes. For a complete meal, consider serving it with a side of steamed vegetables or a fresh green salad.

To finish, stir in grated parmesan cheese and fresh basil. This adds a final touch of richness and freshness to the dish.

 

Marry Me Chicken

Serves 6

INGREDIENTS

  • 2 pounds chicken breasts boneless, skinless
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon garlic minced
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes or more if you like it spicier
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup sun dried tomatoes
  • 1/2 cup parmesan cheese grated
  • 2 tablespoons fresh basil

METHOD

  1. Place a large skillet over medium high heat and add in olive oil.
  2. Season the chicken breasts on both sides with salt and black pepper. Cook the chicken for 4-5 minutes per side.
  3. Remove the chicken from the pan and add in the garlic, thyme and red pepper flakes. Cook and stir for 30 seconds.
  4. Pour in the chicken broth and scrape the bottom of the pan with a wooden spoon to get up any leftover chicken flavors.
  5. Add in the heavy cream, sun dried tomatoes (drained from the oil) and place the chicken back into the pan.
  6. Bring the sauce to a low boil and allow to simmer for 5-7 minutes over medium low, until the sauce thickens, stirring frequently.
  7. Make sure the chicken is cooked to 165º F
  8. Lastly, add in the parmesan cheese and fresh basil, stir to combine and melt the cheese. Allow the chicken to rest for about 5 minutes before slicing and serving.

Notes

  • If the chicken is too thick, simply run a sharp knife through the center splitting it into two pieces.
  • This recipe is best served the same day or frozen for later. To freeze place in an air tight container for up to 3 months. Reheat in the microwave, stirring frequently to make sure the cream doesn’t separate.
