Marvelous Mexican Meal

Mexican Meatloaf
2 Anaheim pepper
¾ lb lean ground beef
Salt and pepper
1 ½ cups salsa
4 slices cheddar or pepper jack cheese
1 (14oz) can refried beans



Cut Anaheim pepper into 4 long pieces. Remove seeds and membrane. Place on oiled baking sheet.

Top each with equal portions of ground beef. Form the beef into small loaves and place on each pepper slice. Season with salt and pepper.
Pour approximately ¼ cup salsa over each meatloaf.

Place into a 350 degree oven; bake aprox 30 minutes or until meat is cooked through. Top each loaf with a slice of cheese and continue to cook until cheese is melted and bubbly.

Serve with refried beans (just empty can into large bowl and heat in microwave until heated through), additional salsa, and Mexican bread. Recipe for Mexican Bread follows.

Mexican Bread
1 lb. pizza dough, Macey’s sells frozen pizza dough in their bakery section. You can also find boxed mixes for pizza dough on the grocery isle – they are very quick and easy to prepare!
2 cups shredded cheddar cheese
2 or 3 chipotle peppers, minced (you find these in a can in the Mexican Food section of your grocery store – the are spicy, so be careful!)
½ cup salsa


Spread thawed or prepared pizza dough out onto a large greased baking pan. Cover dough with cheese and peppers. Dollop salsa randomly over bread.
Place into a 450 degree oven; bake for 10-15 minutes or until crust is cooked through.
Slice and serve with Mexican Meatloaf.
