Matildas Pie and Chips

Pie Meat
1 1/2 lbs. diced stew beef (1/2″ dice)
2 tbs. olive oil
1 tbs. minced garlic
1 cup diced onion
1 tbs. tomato paste
2 tbs. flour
3 cups beef stock
salt and pepper to taste


Heat oil and sauté garlic and beef with a pinch of salt and pepper for 5 minutes. Add the onions, sauté for 5 minutes more, sprinkle in the flour and tomato paste and mix well. Add beef stock, bring to a simmer, braise on low heat stirring often for 30 minutes. Salt and pepper to taste.

Pies for The Pie and Chips (6 Each
1 recipe pie meat
12 sheets puff pastry (5 x 5)
1 each egg
6 each individual pie tins


Line the pie tin with 1 sheet of pastry, remove any excess. Fill the pie tin and pastry with meat filling (cold) cover with another pastry sheet and seal edges, remove any excess. Beat the egg with a drop of water and brush over top of pies bake in pre-heated 350 degree oven for 30 – 40 minutes. Enjoy!
