Chef Tom Woodbury shares his secret to making the perfect Mojo Marinated Pork Roast.
3-4 lb boneless pork shoulder
1/2 cup orange juice
1/2 cup lemon juice
1/2 cup lime juice
1/4 cup vegetable oil
2 tbs dry oregano (or 1/4 cup fresh/chopped oregano)
10 cloves of garlic- minced
2 Tbs salt
Cut the top of the roast in a crisscross/diamond pattern’ about 1/4″ deep
Combine orange, lime, lemon juice, oil, oregano, and garlic, mix well.
Place the roast in a 5-6 quart roasting pan, pour marinade in the pan with the roast. Cover and refrigerate for 3-8 hours.
Preheat oven to 325.
Remove roast from the fridge
Liberally sprinkle the salt on the roast.
Place roast, uncovered, in the oven.
Baste the roast in the marinade, pan juices every 30 minutes.
Cook roast to an internal temp of 185 for individual slices, or 195 for pulled pork.
