Macaroni and Cheese
24 Oz bag of Elbow Macaroni. Large or Small elbows—your choice.
16 Oz Cheddar cheese (mild or medium) Grated.
1 cup Milk (2% or whole)
Crushed Ritz or Saltine crackers, or potato chips.
Spray casserole dish– glass or metal– (9 X 16) with Pam or Crisco
Bring water to boil, and cook macaroni
Grate cheese
Put grated cheese in large mixing bowl, and after draining water from cooked macaroni, pour over top of cheese. Mix with wooden spoon or spatula.
Pour mac and cheese into casserole dish, Add a cup (or cup and a half) of milk. The more milk, the creamier.
Cover with foil, and bake at 350 for 25-30 minutes. (Stir mixture at about 20-25 minutes to even out the cheese) Add more milk if desired.
Remove dish, and sprinkle crushed crackers or chips on top of entire casserole… ¼ inch or so.
Put dish back in oven—no foil—set oven to broil.
Check every 2-3 minutes. When crackers/chips are just starting to turn golden brown, remove. (Watch this step closely—crackers/chips will burn quickly if you wait too long!)
