Mozzarella, Sausage, Sun Dried Tomato And Basil Couscous Salad


1 3-oz package ready to use or reconstituted Sun Dried Tomatoes, cut in julienne strips
3 ounces fresh mozzarella cheese or low fat mozzarella cheese, diced
6 ounces low fat chicken or turkey sausage, cooked in casing and sliced thinly
1/3 cup thinly sliced red onion strips
½ cup garlic or basil and oregano seasoned rice vinegar fat free dressing
2 teaspoons extra virgin olive oil
1/3 teaspoon salt
½ teaspoon fresh ground black pepper
1 large clove garlic crush or pressed
1 cup uncooked couscous
1 ¼ cup water
1/2 cup fresh chopped basil
basil leaves for garnish – optional*

1. Combine first 7 ingredients in a large bowl, cover and marinate in refrigerator for 30
minutes.

2. Bring 1 ¼ cup water to boil in medium saucepan. Gradually stir in couscous, cover
and remove from heat. Let couscous stand for 5 minutes, then uncover and fluff with
a fork. Allow couscous to cool a few minutes.

3. Add couscous and basil to marinated ingredients and toss all together gently. Cover
salad and allow to chill or serve at room temperature and garnish with basil leaves if
desired.

Yield approximately 8 -1 ½ cup servings each at approximately 200 Calories; 6 grams
total fat; 1.8 grams saturated fat; 22 milligrams cholesterol; 30 grams carbohydrate;
2.5 gram fiber; 11.7 grams protein; 543 milligrams sodium.

Compares to high fat version at 300 calories and 18 grams of fat per serving
