Neopolitan Cookies


1 cup margarine
1 1/2 cups granulated sugar
1 egg
1 tsp. Vanilla
1 1/2 tsp. Baking powder
1/2 tsp salt
2 1/2 cups flour
1/2 tsp almond extract
1/4 tsp liquid red food coloring
1 square (1oz.) unsweetened chocolate, melted
1/2 cup chopped pecans or walnuts


Cream together margarine and sugar. Mix in egg and vanilla. Add baking powder, salt, and flour and mix until all ingredients are well combined.

Line the bottom and sides of a 9 x 5 x 3 – inch loaf pan with waxed paper. Divide the dough into thirds.

Add the almond extract and red food coloring to one portion of dough. Mix well to create a nice pink color.

Stir in the pecans or walnuts to another portion of dough.

Add the melted chocolate to the last portion of dough. Mix well.


Layer the dough into the lined loaf pan starting with the pink layer. Layer the pecan layer next and the chocolate layer last. (Make sure the pecan layer is in the middle.) Cover and refrigerate overnight.

Remove the dough from the loaf pan and peel off the waxed paper. Cut the dough into two pieces lengthwise. Slice the dough crosswise into 1/8 inch slices. Place on an ungreased or parchment-paper-lined cookie sheet approximately one inch apart.

Bake at 350 degrees for 10-12 min. Cool on wire racks. Yield 5 dozen.
