3 pound bag red potatoes, washed
6 green onions including tops, cut into 1 inch pieces
6 tablespoons butter, melted
1 tablespoon rosemary, crushed
½-1 teaspoon salt
1 1/2 cups sour cream (more if needed)
Boil potatoes and onions until tender. Meanwhile, combine butter and rosemary and cook in microwave oven for 1 minute, at 30 seconds intervals.
Let sit to infuse flavors.
Drain potatoes and onions into a colander, and return back to pan. Do not
peel potatoes.
Add butter mixture to potatoes and mash to desired
consistency. Add salt and sour cream and combine well.
Yield: 6 servings
Variations: Put green onions in raw after mashing the potatoes and/or add ½ teaspoon garlic salt and omit salt and/or add 1-2 tablespoons Ranch Dressing
