Get all the nutrients out of fish, without the fishy flavor! This dish is not only flavorful, but can be made in a single sheet pan. Pack in the veggies and the spices with very little clean up after dinner.

One Sheet Pan Halibut & Veggies
Ingredients
Marinade
- 1 1/2 cups olive oil
- 3 lemons, zest and juice
- 1/2 tsp oregano
- 3 tsp dill
- 3 tsp coriander
- 4 tbsp minced garlic
Vegetables
- Asparagus
- Chopped onions
- Cherry tomatoes
- Zucchini
- Squash
- *Any vegetable will work!
Halibut filets… or sole/cod!
Fresh snipped basil and capers for garnish.
Directions
Marinate veggies and fish in a large bowl or bag for a minimum of 15 minutes. Line a baking sheet with foil and lay veggies and fish in a single layer. Sprinkle tray with salt and pepper. Bake on 400 for about 15 minutes, then turn oven to broil and broil for a couple minutes, until tomatoes begin to shrivel and split. Serve over a bed of wild rice, garnish with fresh snipped basil and capers. Enjoy!
