Orange Caramel Yams and Apples with Pecan Streusel
5-6 lbs. Yams
½ tsp Salt
2-3 med. Granny smith apples
2 tsp Butter
¼ tsp Cinnamon
1 stick Butter
1 c. Brown sugar
2 Oranges – zest and juice
1 stick Butter (soft)
1 c. Brown sugar
½ c. Oats
1 T Flour
½ tsp Cinnamon
½ c. Pecans

Place yams and salt in sauce pot and cover with water. Simmer until knife penetrates yam with no resistance. Drain water and put yams into fridge until cool.

Peel apples, core, cut in half and slice. In sauté pan add butter and sauté apples until browned on the edges. Add cinnamon. Let cool.

Place butter, brown sugar and orange zest with juice in a sauce pan. Boil until thickened and starts to resemble caramel. Take off heat and set aside.

Combine dry ingredients, mix. Add butter and crumble.

Assemble



Peel yams and cut into discs 1/4″. Place in a 9×9 baking dish with apples. Pour orange caramel over the top of yams and apples. Top with pecan streusel. Cook in a 350 F oven for 30 minutes or until browned. This dish can be made one or two days before using.
