2 cups cooked (preferably grilled chicken), diced
2 stalks of celery, diced
1/2 red onion, diced
1/4 cup toasted pecans, chopped
juice of one orange
1/2 cup mayonnaise
1 tablespoon fresh chopped parsley
1 diced tomato
salt and pepper to taste
In large mixing bowl, combine all of the above ingredients, except the orange
juice.
Squeeze orange over top of salad and combine. Chill for one hour.
Serve on a roll with lettuce or on fresh greens.
