Oven Omelet


3/4 cup salsa
2 cups shredded cheese of choice*
1 cup filling ingredients of choice*
6 large eggs
8 ounces sour cream
tomato wedges, optional garnish
black olives, optional garnish


Pre-heat oven to 350 F.

Butter a deep dish pie plate or a 10-inch quiche dish or 9×9 pan. Spread with salsa (I prefer non-chunky salsa for this recipe). Sprinkle with half the cheese. Add chopped filling ingredients of choice. Cover with remaining cheese.

Beat together eggs and sour cream until smooth. Pour over cheese mixture. Bake uncovered for 30-40 minutes or until set in middle and golden brown on top. Slice into wedges, garnish with tomato wedges and black olives. Serve with fresh fruit.

* NOTE: Try a variety of cheese or try a combination of more than one cheese for interesting flavors. Filling ingredients of choices may include vegetables or meats, such as chopped ham, cooked crumbled bacon or sausage, chopped green pepper, sliced olives, chopped artichoke hearts, diced chilies, sliced mushrooms, etc.
