Overnight Oats

Try a new approach to breakfast. Make overnight oats and avoid the
morning rush.
Fresh Raspberry Passion Fruit Vanilla Cream Oats
4 Half pint jars with lids
1 1/3 c. old fashioned oats
1 c. Passion fruit juice
11/3 c. vanilla flavored Greek Yogurt
1 pint fresh raspberries


Divide oats, juice, and yogurt evenly among jars. Cover, and shake well to mix.
Place a handful of raspberries into each jar, stir reserving some for garnish, stirring to mix.
Replace lid and refrigerate overnight.

To serve, remove lid and garnish with additional berries if desired. Serve chilled.

Makes 4 individual servings

Cinnamon Steel Cut Oats with Fresh Peaches and Brown Sugar Pecan Streusel
Oats:
1 c. steel cut oats
3 3/4 c. water
1/4 c. half and half
2 T. brown sugar
1/2 t. cinnamon
1/4 t.
Fresh or frozen peaches, sliced or chopped

Place all ingredients in a slow cooker. Whisk to blend. Cover and cook on low for 8 hours.
Streusel:

1/3 c. chopped pecans
1/3 c. brown sugar
1T. butter, melted
1/4 t. cinnamon

Place all ingredients into a small bowl, and toss together with a fork until evenly blended.
Stir again if necessary as mixture cools.

To assemble:

Spoon oats into individual serving dishes. Top with fresh peaches and sprinkle with streusel
mixture.

Tahitian Vanilla, Mango, Coconut, Macadamia Toasted Oats with Fresh Sliced Bananas
4 c. old fashioned oats
1 c. coconut
1/3 c. macadamia nuts, coarsely chopped
1/2 c. brown sugar
1/2 c. oney
1/4 c. mango, or pineapple preserves
2 T. oil
1 t. Tahitian vanilla
3/4 t. salt
1/2 c. chopped dried mangos
Fresh sliced bananas


In a large bowl, toss together oats, coconut, and macadamia nuts. Set aside

In a small saucepan, stir together brown sugar, honey, preserves, oil, vanilla, and salt.
Cook over medium heat until melted.
Pour over oat mixture, and stir to evenly coat. Spread evenly on a large baking sheet.

Bake at 300 degrees for 20 minutes.
Remove tray from oven and stir. Place tray back into the oven and turn off heat.
Leave in oven overnight without opening door. Lift oats off tray with a metal spatula,.
Add dried mangos, and toss to mix. Store in an airtight container.

Spoon into individual bowls, serve with fresh sliced bananas and milk.
