BBQ Chicken
3 Tbl Fresh Garlic
4 Oz Olive Oil
4 Oz Soy Sauce
5 Lbs Chicken Breast
1 Lb BBQ Sauce
In a bowl combine GARLIC, OLIVE OIL & SOY SAUCE. Stir well before adding CHICKEN & stir again.
Remove CHICKEN from mixture to a sheet pan. Bake at 325 degrees for 5 minutes.
Let CHICKEN cool for 10 minutes. Then toss in a bowl with BBQ SAUCE. (Be sure chicken is still slightly warm so that it will absorb the sauce.)
Makes 3 Quarts (5lb 8 oz)
Roasted Corn and Jicama Mix
1/2 Cup Olive Oil
1 Tbl Black Pepper
1 Tbl Salt
2 Lb 8 Oz Corn Kernals
1 Ot Jicama – (Diced 1/4 inch)
In a bowl combine OLIVE OIL, PEPPER & SALT. Stir well, add CORN & stir again.
Spread mixture out on a sheet pan. Bake at 325 degrees for 10 minutes. Let cool.
Be sure mixture is completely cool, then combine with JICAMA in container.
Makes 2 Quarts.
Crumbly Bleu Cheese Salad
16 oz bowl (level) Chopped Romaine Lettuce
1 ladle Caesar Dressing
1 cup CRAISINS®
1/2 cup Sunflower Seeds
1/2 cup Blue Cheese Crumbles
In a stainless steel mixing bowl, combine CHOPPED ROMAINE, CAESAR DRESSING, CRAISINS®, SUNFLOWEER SEEDS & BLUE CHEESE CRUMBLES. Using tongs, gently toss until lettuce is fully coated. Mound in serving bowl.
Sprinkle BLEU CHEESE CRUMBLES & CRAISINS® on top.
For a large 32 oz. salad, double the recipe above.
