Pat’s Irish Soda Bread


3 1/2 cups flour
4 1/2 teaspoons baking powder
1 teaspoon salt
1/3 cup sugar
2 cups buttermilk
1 egg
1/4 cup caraway seeds
1 cup raisins, or currents
1/4 teaspoon baking soda


Combine flour, baking powder, salt, and sugar. In a second bowl beat together buttermilk and egg. Add seeds, and raisins, stir well. Stir in soda. Add milk mixture to flour mixture and mix well. Batter should be sticky. Place in greased and floured loaf pan. Bake at 350 degrees for approximately 1 hour or until bread is done. Bread is cooked when a toothpick inserted in center of bread comes out clean. Remove from the oven and enjoy the luck of the Irish.
NOTE: Traditionally Irish Soda bread is round in shape with a cross cut in the top. Use a greased and floured round cake pan. Cut top of dough with a sharp knife 15 minutes after placing in the oven. Continue to bake until done.
