1/4 cup raspberry vinegar
1 Tbl. Dijon mustard
1 tsp. sugar
1/2 cup plus 2 Tbl. extra virgin olive oil
salt and pepper to taste
1/4 cup chopped walnuts
6 – 8 cups mixed greens
1 cup chopped or sliced pears
4 oz. bleu cheese
Combine raspberry vinegar, mustard and sugar in a small bowl. Whisk in olive oil gradually and season with salt and pepper.
Spread walnuts on baking sheet and bake for 5 min. at 300 degrees to toast.
In a salad bowl, place greens and pears decoratively.
Top with bleu cheese. Add vinaigrette and top with walnuts.
