Penne Alla Vodka

2 Tbl. olive oil
2 Tbl. butter
1 medium sweet onion, such as Walla Walla or Vidalia, thinly sliced
2 cloves garlic, minced
1 pinch hot red pepper flakes
8 oz. sliced fresh mushrooms
2 cups tomato sauce, homemade or bottled (good quality)
1 cup chicken or beef broth
2-3 Tbl. vodka
1 cup chopped fresh basil
1 lb. penne pasta, cooked “al dente”, drained
1/2 cup grated Asiago cheese.

In a large skillet, heat oil and butter. Saute the onion for 5 minutes on low heat until soft and golden. Add garlic, red pepper flakes, and mushrooms. Cook on low heat 2 min, stirring often. Add tomato sauce, broth and vodka. Cook for 10 minutes on low heat, stirring often. Slowly stir in the half and half and fresh basil. Cook until heated through. Place pasta in serving bowl. Top with sauce and grated asiago. Serves 4-6
