Pineapple Upside-Down Cake


1 can pineapple slices
1 vanilla cake mix
Brown Sugar
1 small jar maraschino cheerries
3 eggs
Oil
Water
Shortening

Line Dutch oven with foil, grease bottom and sides of foil with shortening. Place pineapple slices in bottom of Dutch oven. Place a cherry in the middle of each pineapple slice. Sprinkle pineapple with brown sugar. Prepare the cake mix with the eggs, oil and water following directions on box. Pineapple juice can be substituted for some of the water. Pour the cake mix evenly over pineapple slices. Bake with coals on top and bottom for 30 minutes, rotate the oven and the lid 1/4 turn at 15 minutes. Cake is done when it starts to turn golden color or is springy.
