Poinsettia Salad with Candy Cane Strawberries


Salad Ingredients:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
1/4 cup sugar
2 packages (6 oz total) lime flavored Jell-O
1 cup boiling water
1 quart vanilla ice cream, softened
2 packages (6 oz total) strawberry kiwi Jell-O
1 cup boiling water
1 cup vanilla flavored yogurt
1 can (12 oz) lemon lime soda, chilled
strawberries
fresh lime and kiwi for garnish


Using the bottom of a 9-inch springform pan, trace a circle on parchment or wax paper. Cut out circle and place in bottom of pan. Combine crumbs, melted butter and sugar. Mix well, press firmly into bottom of pan. Chill while preparing layers below.

Dissolve lime Jell-O in 1 cup boiling water (be sure it is completely dissolved). Using a whisk, stir ice cream into Jell-O. Continue to whisk until smooth. Pour mix over graham cracker crust in springform pan. Chill until almost set.

Dissolve strawberry kiwi flavored Jell-O in 1 cup boiling water (be sure all crystals are dissolved). Stir 1/4 cup Jell-O into yogurt and spread over lime layer. Add lemon-lime soda to remaining Jell-O and set aside.

Slice strawberries and arrange on top gelatin in a poinsettia pattern. Use strips of fresh lime peel to create greenery and add detail. Gently spoon 1/4 the Jell-O over arranged strawberries. Chill 10-20 minutes. Pour remaining Jell-O over top and chill until well set (3 hours or overnight).

Remove springform pan sides, gently slide salad from bottom of pan and place on serving plate. Garnish with curls of fresh lime peel, slices of kiwi and strawberries.

Candy Cane Strawberries:

Melt 1/2 pound white chocolate or confectioner’s coating; melt 1/2 red colored confectioner’s coating. Brush strawberries to clean (do not clean with water). Holding strawberry by the cap dip in melted white chocolate covering half to 3/4 the strawberry. Allow excess to drip from berry, place on wax paper. Allow to set until firm. Dip berry in melted red coating covering up 1/2 the white coating. Allow excess to drip from berry and place on wax paper to set.
