Polar Bear Claw Cookies and Hard Boiled Egg Recipes

Polar Bear Claw Cookies
¾ c white chocolate chips, divided
2/3 cup sugar.
2 c flour
½ tsp baking powder
½ tsp salt
¾ c butter, softened
1 egg
1 tsp vanilla
12 caramels
½ c cashews

Preheat oven to 375 degrees

Microwave and melt 1/3 c of the white chocolate chips. Add butter to the melted chocolate and beat until cream. Add sugar, vanilla and egg. Add the dry ingredients until just blended. Coarsely chop the cashews and caramels. Add nuts, chips and caramels. Bake on greased cookie sheet for 10 to 12 minutes.

Creamed Ham and Eggs
1 cup ham, chopped
1 package white cream sauce
4 eggs, hard boiled and roughly chopped
¾ cup sharp cheddar cheese, grated (Optional)
4 English muffins split, toasted and buttered


Prep time 5 minutes
Cook Time: 15 minutes
Servings: 4

Prepare white cream sauce according to directions. When it is hot, gently stir in ham, eggs and cheese stir lightly until cheese is melted. To serve, place muffin halves (butter side up) on four serving plates and divide creamed mixture among them.

Tips: Your favorite toast or muffins can be substituted for the English muffins. You can add amore eggs or ham or both.

Egg Salad
4 eggs, hard boiled, chopped fine
3 Tbsp. Mayonnaise or salad dressing
1 tsp. Yellow mustard (or your favorite kind)
¼ cup cheese, shredded (your favorite flavor)
2 Tbsp. Green bell pepper, chopped fine
2 Tbsp. Onion, chopped fine
Salt and pepper to taste


Place all ingredients in a medium bowl and stir together until well mixed. Chill. This can be served as a sandwich filling or on chopped lettuce as a salad.
Deviled Eggs
6 hard boiled Eggs
3 Tbsp. Mayonnaise or salad dressing
1 tsp. mustard
2 tsp. cider vinegar
Salt and pepper to taste
Paprika (optional)


Cut eggs in half lengthwise with a knife. Carefully remove the yolks, and place in a medium bowl. Mash yolks with a fork until they are smooth. Add remaining ingredients, stir until smooth. Very carefully spoon the mixture back into the egg white halves. Garnish with a light sprinkling of paprika (optional)

Hard Cooked Eggs

Vinegar or Salt

Place eggs in a pan of cold water in a single or double layer. Add 1 tsp. salt to the water or 1 Tablespoon of vinegar. Place on high heat and bring to a rolling boil. Put a lid on the pan. Turn off the heat and set the timer for 15-17 minutes. When timer goes off drain the water off the eggs leave them in the pan and immediately run cold water over them. Fill the pan of eggs with cold water and add two to three cups of ice to the water. Allow eggs to sit in the ice water until they are completely cold. Drain eggs and store in the refrigerator or use immediately.
