4 cups pomegranate juice
1/2 cup sugar
1/2 cup orange juice
1 1/2 teaspoons grated orange peel
1 pomegranate, peeled, with seeds separated
1/2 cup sparkling wine, optional
1. Bring pomegranate juice, sugar, orange juice and zest to boil in small saucepan, stirring often; set aside.
2. When cool, pour mixture into 8×8-inch baking dish; freeze until semi-firm, at least 2 hours.
3. Scrape tines of fork across frozen pomegranate mixture, forming flakes. Freeze for an additional hour and repeat.
4. When ready to serve, scrape tines of fork across frozen pomegranate mixture. Mound generous 1/2 cup granita into each of 6 glasses. Top with a sprinkling of pomegranate seeds and drizzle with optional sparkling wine.
