Pomegranate Streusel Muffins

Pomegranate Streusel Muffins
2 c. flour
2/3 c. sugar
1 T. baking powder
1/2 tsp. salt
1 tsp ground ginger
1 tsp grated orange peel
1 c. milk
1 egg
1/4 cup softened butter
1/2 c. pomegranate seeds (approx. 1 pomegranate)

Mix streusel topping using:
1/3 c. flour
1/4 c. sugar
1/4 c. chopped nuts
2 T. softened butter

Preheat oven to 400 degrees. Mix all ingredients together, adding pomegranate seeds last. Spoon into greased muffin tin.

Sprinkle evenly on muffins. Bake 19 min. Let sit 2 minutes and remove from pan.
(makes 12 regular sized muffins)
