Pork Roast on a Spit


5-7 lb Pork Roast, rolled
Garlic Powder
Season salt
Coarse black pepper
Olive oil

Brush olive oil over the outside of the roast until it is completely covered. Rub garlic powder and season salt into the oil and meat. Cover seasoned roast with coarse pepper. Place pork roast on spit. Place spit on ground that is covered with heavy duty foil. Wrap the outside edge of coal brackets of the spit, forming a square. Fill coal brackets with hot coals. As coals burn down, add new coals to the top, alternate hot and cold coals. Pork Roast will cook in about 1 1/2 hours. Check for doneness with a meat thermometer, correct temperature is 170. Outside skin will become very brown.
