Pumpkin pie protein balls are perfectly fall!

Amy Roskelley shared three new recipes. Amy likes to flavor protein balls with spices, flavored protein powder, extracts, food grade flavored candy oils, or sugar free jello mix powder as a low calorie flavorer.

 

Pumpkin Pie Protein Balls

Chill Time: 1 hour
Makes 19 balls

INGREDIENTS

  • 2 scoops Vanilla Protein Powder
  • 2/3 cup oats ground into flour
  • 1/3 cup graham cracker crumbs
  • 1/4 cup almond butter
  • 1/4 cup canned pumpkin
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Topping

  • 1 tablespoon white chocolate chips optional

METHOD

  1. Put oats in a blender, and pulse until it becomes flour.
  2. Mix all ingredients together. Roll into balls and place on parchment paper.
  3. Put in fridge while you melt the white chocolate.
  4. Drizzle white chocolate on protein balls.
  5. Return to fridge until chocolate hardens or you are ready to eat.

Lemon Bar Protein Balls

Chill Time: 1 hour
Makes 16 balls

INGREDIENTS

  • 1/2 cup almond butter
  • 1/4 cup honey
  • 6 drops lemon flavor oil
  • 1 scoop vanilla protein powder
  • 1/3 cup all purpose flour
  • 1/3 cup crushed graham crackers

Topping

  • 1 bowl zero calorie powdered sweetener
  • 1 lemon zest

METHOD

  1. Mix wet ingredients together: almond butter, honey and flavor drops.
  2. Add dry ingredients and mix until dough has no dry ingredients left.
  3. Roll into balls (1 tablespoon each), and roll in zero calorie powdered sugar
  4. Top with lemon zest and chill.

Strawberry Protein Ball

Chill Time: 1 hour
Makes 6 balls

INGREDIENTS

  • 1 scoop vanilla protein powder 32 grams
  • 1/3 cup oats dry
  • 1 tablespoon Sugar free Jello Powder, strawberry flavor
  • 25 grams strawberry

METHOD

  1. Blend protein powder, oats, sugar free jello powder in a food processor.
  2. Add one small strawberry, about 25 grams. Blend in the food processor. If it comes out like dough, it’s good. If it’s still powdery, add 1/2 strawberry more at a time. Too much strawberry will give you mush! There’s a lot of water in strawberries, so take it slow. And don’t use a frozen strawberry. Also, too much water.
  3. Once the mixture resembles the consistency of cookie dough, you’re good to roll them into 1 tablespoon balls, making 6 of them.
