Quesadillas with Fresh Tomato Salsa

Quesadilla
6 flour tortillas
2 cups cheese (flavor of choice) shredded
1/4 cup black olives, sliced (optional)
2 tablespoons canned chopped green chilies (optional)

Place tortilla on a hot griddle or fry pan, sprinkle with grated cheese, sprinkle with olives and chilies (if desired). Fold tortilla in half. Heat until tortilla begins to brown and cheese is melting. Turn tortilla over and continue until cheese is melted. Cut quesadilla into wedges and serve with salsa.
Fresh Tomato Salsa
2 tomatoes, chopped
1 onion, chopped
3 tablespoons cilantro, finely chopped
1/4 cup lemon juice
2 tablespoons grated lemon peel
1 avocado, chopped (optional)
salt and pepper to taste

NOTE: Peppers may be added to this recipe for flavor and heat. Any combination of bell peppers, jalapenos, and chilies may be added. Jalapenos and red chilies will add heat. Start mild and increase to desired heat.

Chop vegetables and combine. Toss with lemon juice, lemon peel, and cilantro. Salt and pepper to taste. Refrigerate until ready to serve.
