Quick Pizza Sandwiches
2 round pieces of flat bread or pita bread
2 T. pizza sauce (see below)
9-10 pieces of pepperoni
1 c. grated mozzarella cheese
Olive oil for brushing
Brush one side of each of the flat bread/pita bread slices with olive oil. Place one on the grill oil side down. Spread with pizza sauce, quickly add pepperoni and mozzarella cheese, top with other flat bread and close the grill to cook. Cook until brown, transfer to a plate and cut into wedges and serve.
You can use a variety of toppings that your family likes. Add as many different toppings as you want but make sure you don’t pile it too high or it will not cook as easily. The kids will love it.
1-6 oz. can of tomato paste
1-15 oz can of tomato sauce
2 T. dried basil
Mix together and use without cooking. Divide into two tablespoon portions. Freeze and defrost as needed.
Quick Bar Cookies
2 boxes of vanilla or yellow cake mix
1 c. oil
Empty cake mixes into a bowl or zip loc bags, add oil and eggs. Stir together until thoroughly mixed. Press into 15″x11″ cookie sheet. Bake for 20-25 minutes at 350º oven. The edges will just start getting brown. Cool and frost with chocolate frosting or warm 2 c. of jam or jelly in the microwave until runny and spread on top of cookies. Cool and cut into squares.
Slice large carrots crosswise and serve with ranch dressing as a dip. Children like the idea that it is bunny money.
