1 package (10 oz) frozen chopped spinach
1 tablespoon butter
1/4 cup finely chopped onion
1-2 cloves minced garlic
1 cup small curd creamed cottage cheese
1 cup milk
1/2 cup biscuit mix
3 eggs
1 teaspoon lemon juice
salt and pepper to taste
1/2 cup grated Italian blend cheese
ground nutmeg
1-2 tablespoons grated Parmesan cheese
Thaw spinach in microwave. Place in strainer and squeeze out excess liquid. Set aside.
Melt butter in frying pan. Add onion and garlic, sauté until onion is cooked. Add drained spinach and mix well.
Spread 1/2 cup cottage cheese in bottom of a 9″ greased pie plate. Add spinach mix. Top with 1/2 cup cottage cheese. Sprinkle Italian cheese blend on top. Mix together milk, biscuit mix, eggs, lemon juice, and salt and pepper. Pour mixture over ingredients in pie plate. Sprinkle with grated nutmeg. Bake at 350 degrees for 30-40 minutes or until knife inserted in center comes out clean. Allow to stand 10 minutes before cutting. Top with grated Parmesan cheese, garnish with a sprig of fresh parsley or other herbs. Serve warm with fresh fruit.
