Quick Tortilla Soup
28 oz. can diced tomatoes or 28 oz. prepared salsa
2 pkgs Salsa Seasoning mix
32 oz. Chicken Broth
24 oz. Frozen White corn

Toppings
Avocado
Sour Cream
Tortilla chips
Fresh limes
Tomato salsa


Mix diced tomatoes and salsa seasoning in a sauce pan.
Add chicken broth; bring to a boil.
Add frozen corn and simmer for 5 minutes.

To serve, place desired amount of tortilla chips in a bowl,
Pour soup over chips and add avocados, salsa, sour cream as desired.
Serve with a twist of lime

Fresh Avocado Salsa
2 medium avocados, peeled and diced
Juice of 1 lime
2 tbsp Fresh coarsely snipped cilantro
Salt and pepper to taste


In a bowl, toss avocados, lime juice, cilantro.
Add salt and pepper to taste.

Pepper Jack Quesadillas
4-6 tortillas
Pepper jack cheese, grated
Fresh avocado salsa (see above)


Heat griddle over medium flame.
Sprinkle jack cheese over tortilla.
When cheese is slightly melted, add avocado salsa.
Fold tortilla and cook until tortilla is golden.
