This Rainbow Crunch French Toast Makes for a Magical St. Patty’s Breakfast

Set the scene for St. Patty’s Day with rainbow crunch French toast!

You could kick the holiday off with a big bowl of Lucky Charms – but there’s way more to St. Patrick’s Day breakfast than just dying your eggs green. This breakfast menu will lay the base for a day full of good luck.

Megan Faulkner Brown shares a March 17th menu to celebrate St. Patty’s Day.

Green Fruit Kabobs

Pile a bunch of green fruit together on a skewer to kabob. Try kiwi, green grapes, honeydew, and green apple slices for a touch of green on you St. Patty table.

Gold Banana Coins

To make your sliced bananas look like gold coins, sprinkle a little bit of gold sugar dust on top.

Rainbow Crunch French Toast

  • 3 large eggs
  • 1 cup milk
  • 1 Tablespoon vanilla extract
  • 1 tsp sugar
  • 3 cups fruity crispy rice cereal
  • Thick bread slices

  1. In a mixing bowl, whisk together eggs, milk, vanilla, and sugar until well combined.
  2. Transfer to a shallow baking dish or bowl. Fill another shallow dish with about 3 cups fruity crispy rice cereal like Fruity Pebbles or Rainbow Krispies.
  3. Using your favorite loaf of bread (I like to use thicker breads for French toast like Texas toast or brioche), place a slice of bread into the egg mixture, soaking each side for a few seconds. Then dip in the fruity crispy rice cereal, pressing them gently into each side of the bread.
  4. Place bread slices on medium-heated griddle or pan and cook for a couple minutes on both sides until golden brown – feel free to adjust the heat to avoid burning.  Serve with whipped cream and your favorite syrup.

Megan Faulkner Brown, the founder of The Sweet Tooth Fairy, blended her love for baking and making lift sweet from an early age. Fond memories of sitting at the kitchen counter, helping her mom bake cookies, imprinted on her the precise color chocolate chip cookies should achieve when emerging from the oven. Megan’s father instilled in her the courage to chase ambitious dreams.

The Sweet Tooth Fairy emerged—a gourmet bake shop that has captured hearts across the Rocky Mountain region. Megan’s baking prowess earned her recognition as one of the country’s most accomplished bakers, as attested by Food Network’s Cupcake Wars, where she not only battled but emerged as the winner. With four bakeries in Utah, Megan’s delectable creations have delighted taste buds far and wide.

Megan’s most cherished roles are those of a devoted spouse and a proud mother of six children—each serving as executive taste testers for the Sweet Tooth Fairy. Whether creating delightful treats or sharing bedtime stories, Megan believes every role contributes to making life sweeter for others.
