You could kick the holiday off with a big bowl of Lucky Charms – but there’s way more to St. Patrick’s Day breakfast than just dying your eggs green. This breakfast menu will lay the base for a day full of good luck.

Green Fruit Kabobs
Pile a bunch of green fruit together on a skewer to kabob. Try kiwi, green grapes, honeydew, and green apple slices for a touch of green on you St. Patty table.
Gold Banana Coins
To make your sliced bananas look like gold coins, sprinkle a little bit of gold sugar dust on top.
Rainbow Crunch French Toast
INGREDIENTS
- 3 large eggs
- 1 cup milk
- 1 Tablespoon vanilla extract
- 1 tsp sugar
- 3 cups fruity crispy rice cereal
- Thick bread slices
METHOD
- In a mixing bowl, whisk together eggs, milk, vanilla, and sugar until well combined.
- Transfer to a shallow baking dish or bowl. Fill another shallow dish with about 3 cups fruity crispy rice cereal like Fruity Pebbles or Rainbow Krispies.
- Using your favorite loaf of bread (I like to use thicker breads for French toast like Texas toast or brioche), place a slice of bread into the egg mixture, soaking each side for a few seconds. Then dip in the fruity crispy rice cereal, pressing them gently into each side of the bread.
- Place bread slices on medium-heated griddle or pan and cook for a couple minutes on both sides until golden brown – feel free to adjust the heat to avoid burning. Serve with whipped cream and your favorite syrup.
