Slow Cooker Cola Roast with Sweet Potatoes
2.5 pound beef roast (**sale** Boneless Beef Oven Rump Roast $2.49/lb.)
1 envelope dry onion soup mix
2 cans (12 ounces each) cola (**sale** Coca-Cola Products 5/$13 with in-ad coupon)
2 pounds sweet potatoes, peeled and cut into 1 ½ inch pieces (**sale** $0.99/lb.)
2 medium onions, cut into eighths (**sale** 3 lb. bag medium yellow onions $1.50)
2 Tablespoons butter, melted
2 Tablespoons firmly packed brown sugar (**sale** WF 32 oz. bag $0.99)
2 Tablespoon pecans, coarsely chopped
½ teaspoon dried sage leaves
1 bag Distinctively Dole Salad (**sale** $3.00 each)
Place roast in a greased 4-5 quart slow cooker. Sprinkle with onion soup mix. Pour soda over the meat in the slow cooker. Cover and cook on low heat 7-8 hours or on high heat 4 hours. DO NOT USE DIET COLA in this recipe!
Heat oven to 450 degrees. Place sweet potatoes and onions in a 9×13 inch pan, drizzle with butter and toss to coat. Bake uncovered 25-30 minutes, stirring once, until almost tender. Stir in brown sugar, pecans and sage. Bake 10-15 minutes longer or until coated and tender.
Prepare salad according to package directions and serve with Cola Roast.
