Roasted Fennel and Mixed Vegetables

Roasted Fennel and Mixed Vegetables
2 fennel bulbs stem removed, cored, and sliced thin
½ lb Brussels sprouts cut in half
2 cups cherry or grape tomatoes
2-3 Tbl fresh thyme or 2 tsp dried
1/3 cup olive oil
Salt and pepper to taste
4 chicken breasts

Place all ingredients into large baking dish. Stir to coat vegetables and chicken with olive oil and seasonings. Preheat oven to 400 degrees. Place baking dish in oven and roast for 30-40 minutes; or until vegetables are tender and the chicken is cooked through.

Serves 4.
