Ruth’s Diner Salmon Salad

Salmon Salad
8 Cups Mixed Greens
3/4 Cup House dressing (creamy vinaigrette)
1/2 Cup Julienne Red Onions
1 Cup Julienne Roasted Red Bell Peppers
1 Can (8oz) Mandarin Oranges Segments
1 Cup Diced Tomatoes
1 Cup Shredded Parmesan Cheese
2 BBQ Salmon Skewers


1. Toss salad greens, red onion, bell peppers, mandarin oranges, diced tomatoes and parmesan cheese in a bowl.
2. Grill two pieces of salmon (no seasoning necessary).
3. Add 3/4 cup creamy vinaigrette dressing of choice and mix well.

Serving: Makes two salads
