Salmon and Asparagus Packages
1 lb. wild salmon, cut into 4 oz portions
¾ pound asparagus, (fresh) trimmed
2 sprigs dill
2 lemons, sliced
1 T. butter Realsalt (coarse)
Preheat oven to 400 degrees. Place salmon fillets in center of four pieces of parchment paper (8″x10″). Lay asparagus along side the filet. Sprinkle asparagus and salmon with salt. Lay 3 slices of lemon over each salmon filet and top with dill. Drizzle 1 tsp. of melted butter over asparagus. Fold parchment into a “package”. Place package on a baking sheet and bake until packets are puffed up and salmon is cooked through, about 12 minutes. Serves 4.
There is something special about being served a cute little package on a dinner plate. Be sure to allow each person to unwrap their special gift, because when they do, the aroma will rise up and cause their mouth to water. My kids are crazy about salmon and asparagus so this is a real treat for them. Serve it with a crisp green salad and perhaps even a nice rice dish.
