Salmon Salad Sandwich


8 ounces of salmon, poached
2 tablespoons mayonnaise
1 tablespoon red onion, chopped
1 tablespoon celery, chopped
1/2 tablespoon fresh dill, chopped
2 tablespoons cucumber, peeled, seeded and chopped
1 tablespoon black olives, chopped
salt and pepper to taste
sourdough or wheat bread, toasted
lettuce and sliced tomato as desired


Combine all of the above ingredients except the salmon and bread. Flake the salmon into the mixture and combine, but don’t over-mix! Toast the bread, and add the salmon mixture as filling. Add sliced tomato and lettuce as desired.
