Sandy’s Fiesta Chicken Bake and Cherries Crisp

Fiesta Chicken Bake
2 cans black beans
2 cans Mexican style corn
1 quart salsa, your favorite
1 cup long grain rice
1 cup water


Stir ingredients in a large dutch oven. Top with:

1 chicken breast per person, flattened. Place a large square of cheese on one end of the chicken breast and roll up. Fasten with toothpicks, then roll in taco seasoning.

Use fifteen coals on top and bottom of dutch oven and cook for one hour. Serve with steamed tortillas.

Cherries Crisp


Mix one yellow cake mix with 1/3 cup shortening and 2 eggs. Stir in a cup of 7-up, then pour into a medium dutch oven, lined with foil. Pour a can of cherry pie filling (can use any type of fruit filling) over the top of the cake. Crumble 1/2 cube of butter with a cup of oatmeal and 1/2 cup brown sugar and sprinkle on the top. Place this dutch oven on top of the large oven, and place ten briquettes on top. Bake for 1/2 hour, then serve warm with whipped cream or ice cream.
