Savory Fresh Herb Butters


1 cup real butter, softened
Mix butter with 1 or more of the following ingredients. Adjust portions to meet taste preferences.

Garlic: 4 cloves pressed garlic,1/2 cup grated parmesan cheese
Thyme: 2 tablespoons each minced tarragon and thyme
Sage, Rosemary, Thyme: 2 tablespoons each, finely minced
Citrus: 1 tablespoon lemon or lime zest, 1/3 cup lime or lemon juice, 1/4 cup minced parsley
Chive: 3 tablespoons chopped chives, 2 chopped onions, 3 tablespoons minced parsley
Bacon: 1 tablespoon minced parsley, 1/4 cup finely chopped cooked bacon, 1/4 teaspoon pepper
Basil: 2 tablespoon minced basil, 4 cloves pressed garlic
For Beef: 4 cloves pressed garlic, 1/4 cup minced parsley, 1 tablespoon minced thyme, 1 tablespoon Worcestershire sauce, salt and pepper to taste


Finely chop/mince ingredients; stir into softened butter until well blended. Chill and shape butter for use by rolling into a log and wrap in wax paper; scoop chilled butter with melon baller; press into butter mold; shape into square, rectangles, or brick shapes. Store butter in an air tight container, refrigerate until ready to use. If spreading herb butter on bread, bring to room temperature prior to service.

Fresh herb butters are excellent on warm bread, fish, steak, grilled chicken, and vegetables. Try one or more of the combinations above to create your favorite.
