You’ll have no trouble eating enough vegetables if they taste good! Now, there is a simple seasoning that should do the trick!
Becky Olsen with Shirley J turns ordinary Brussels sprouts into a delicious fall side dish.
Shirley J Roasted Brussels Sprouts with Pomegranate
1 ½ lbs. Brussels sprouts, trimmed and halved
2 TB. olive oil
4 tsp Shirley J Italian Seasoning
½ tsp sea salt (or to taste)
pinch black pepper
½ lg. red onion, sliced
3 TB pomegranate arils
¼ c. toasted almonds
Preheat oven to 400 degrees. In a small liquid measuring cup mix olive oil, Shirley J seasoning, sea salt and pepper. Place Brussels sprouts and onions on baking sheet, then drizzle olive oil mixture over and toss until Brussels sprouts are covered. Roast for 30-35 minutes, stirring twice. Bake until deep golden brown and crisp on the outside, though inside should be tender.
Transfer to serving bowl and toss in almonds. Taste and adjust seasonings. Garnish with pomegranate arils.
