Shrimp Ceviche

½ pound raw shrimp cut into small pieces
½ cup fresh lime juice
¼ cup fresh cilantro, chopped
¼ cup white onion, chopped
2 tablespoons fresh green pepper, diced
2 tablespoons fresh red pepper, diced
4 ounces ginger ale
2 tablespoons salt
½ gallon boiling water
1 tablespoon orange zest
1 teaspoon jalapeno pepper, diced

Place the salt into the boiling water. Cook the shrimp in the salted boiling water for 90 seconds. Remove the shrimp and place on ice. Add the remaining ingredients and marinate in the refrigerator for at least one hour.

To serve:
Spoon into serving bowls and serve with soda crackers and hot sauce.
