8 ounces medium-sized shrimp, peeled and deveined
2 cloves garlic, crushed
1 Roma tomato, diced
1/3 cup feta cheese
1/4 cup Greek olives, pitted and diced
1 tablespoon oregano, dried
salt and pepper to taste
1 pound penne pasta, cooked
1 tablespoon fresh basil, chopped
2 tablespoons olive oil blend
2 tablespoons green onions, chopped
Toss together the garlic, green onion, and shrimp with the olive oil and then cook in a medium-sized
sauté pan over medium heat for 2 minutes. Add the tomato and cook for one more minute. Add
the feta cheese, olives, basil, and oregano and cook for one more minute. Add the hot penne pasta
and salt and pepper to taste and serve. Serves 2.
