Sloppy Joes (Skoppies) w/Cheese

A “few” years ago I served “Sloppy Joes” to my young nieces. Not able to pronounce the name they later told their Mother they wanted “Skoppies” for dinner. Whether you call them “Sloppy Joes” or “Skoppies,” they are a traditional summer fare.

2 pounds lean ground beef
1 medium onion, chopped fine
1/2 cup ketchup
2 cans (10.75 oz) chicken gumbo soup*
2 tablespoons prepared mustard
1 tablespoon Worcestershire sauce
1/2 small green pepper, chopped
1/4 cup brown sugar
1 can (8 oz.) tomato sauce
20 hamburger buns
20 slices cheddar cheese


Brown ground beef with onion until cooked through. Drain off excess fat from meat. Add ketchup, soup, mustard, Worcestershire sauce, green pepper, sugar, and tomato sauce. Bring to a gentle boil, reduce heat and simmer for 1-2 hours or until desired consistency. Stir frequently to prevent scorching.

To serve, toast hamburger buns, place 1/4 cup meat mix on 1/2 the bun, add a slice of cheese and top with second half of bun.

Mix freezes well. Prepare now; thaw and reheat when friends and family gather for impromptu summer fun.

NOTES:
*May substitute vegetable beef soup.
