S’mores Ice Cream Cake

Classic campfire flavors in a frozen, ice cream treat!
S ‘More Ice Cream Cake
1 1/2 cups graham cracker crumbs (about 9 full sheets)
3 tablespoons sugar
3 tablespoon butter, melted
2 bottles (11 oz ea) hot fudge ice cream topping*
6 cups ice cream (about 1.5 -2 qts)
4 cups mini marshmallows
Chocolate syrup, optional garnish


Crush approximately 1 package (9 full sheets) graham crackers to make 1 1/2 cups
cracker crumbs. Mix crumbs with melted butter and sugar. Press approximately 1 1/2-
cups of the crumbs into the bottom of a 9-inch spring-form pan (set remaining crumbs
aside). If needed, freeze crust 15 minutes to firm up. Soften one bottle hot fudge
topping according to bottle directions (don’t completely melt, just make it spreadable).
Gently spread hot fudge over graham cracker crust. Freeze until firm, 30 minutes to
overnight.

Soften ice cream by placing in refrigerator 20-30 minutes (my preferred method); or you
may microwave ice cream on medium setting in 10 second intervals, just until ice cream
may be spread. Spread ice cream over prepared crust. Wrap and freeze until solid – 3-4
hours to overnight – the more solid the ice cream the better.

Don’t warm the second bottle of hot fudge, spread over ice cream and freeze 20-30
minutes. Broil S’More Ice Cream Cake 4-inches from oven broiler (or use a kitchen
torch); just until marshmallows are puffy and beginning to brown – don’t burn them.
Remove from boiler and place Cake in the freezer to refreeze the outer edges (half hour
to overnight or as long as your appetite will allow). Run a knife around edges of pan to
loosen ice cream and remove spring form pan sides. Sprinkle top of S’More Ice Cream
Cake with remaining graham cracker crumbs and drizzle with optional chocolate syrup.

Notes:
Bring the ooey gooey S ‘Mores indoors for a cool twist on a classic treat – it is so good
you will want “some more!” Cake serves 12-16

Alternate preparation – use mini spring form pans for smaller ice cream cakes.

*Try substituting Ghirardelli Milk Chocolate and Caramel Squares for the hot fudge
topping – very delicious!
