Souvlaki Marinated Chicken Skewers
1 tsp minced onion
2 cloves garlic, minced
6 Tbsp. olive oil
6 Tbsp. lemon juice
2 tsp salt
1/2 tsp pepper
1 tsp oregano
2-3 lbs chicken cut into 1-2 inch pieces
Combine all ingredients in a glass bowl or casserole. Add chicken pieces and stir well. Cover and marinate in the fridge for 3-4 hours. Put meat on skewer stick. Cook on a countertip grill or on a barbecue grill. (If you barbecue, soak sticks in water first so they don’t catch on fire.) You can also broil until cooked through.
If freezing, place all ingredients including meat in a gallon size freezer bag. Freeze. The meat will marinate nicely when you thaw. When thawed, place chicken on skewers and cook as directed above.
