Strawberry Spinach Salad with Maple Dressing
1 Cup Mixed Baby Field Greens
1 # Cleaned Spinach Leaves
1 Pint Fresh Strawberries
1 Cup Feta Cheese
1 Cup mandarin Oranges
1 Bag Enoki Mushrooms
1 Cup Candied Walnuts
In a large salad bowl toss the baby field greens and spinach leaves.
Coarsely cut the Strawberries and toss with the greens
Place 1 cup of the spinach mix on a salad plate and garnish with the remaining ingredients
Serve the maple dressing on the side.
2 Cups Heavy mayonnaise
3/4 Cup Maple Syrup
3/4 Cup Balsamic Vinegar
Juice from 1 orange
Salt to taste
Mix the mayonnaise and maple syrup until well blended and add the balsamic vinegar and the juice from one orange and mix well.
Add salt to taste.
