Spicy Black Bean Rice with Shrimp


2 cups wild rice blend, cooked
¼ cup spicy sausage, raw
¼ red bell pepper, chopped
¼ cup red onion, diced
½ pound 26/30 shrimp, raw, (peeled and deveined?)
1 cup black beans, cooked
2 tablespoons blackening spice
1 tablespoon butter
1 tablespoon crushed pepper
2 cloves garlic, crushed
2 tablespoons parsley, chopped


In a heavy sauté pan over medium-high heat, add butter and cook for 30 seconds. Add shrimp, onion, peppers, sausage, garlic, crushed pepper and blackening spice and cook for 3 to 4 more minutes. Add rice and beans and combine. Garnish with chopped parsley. Serves 4.
