Spicy Peach Salsa for Grilled Meats and Fish


2 Tbl. butter
1 Tbl. chopped fresh ginger
1 jalapeno pepper, cored and diced
4 large peaches, pitted and cubed
1 Tbl. brown sugar
juice and zest of 1 orange
2 Tbl. tequila (optional)
1/2 cup chopped cilantro
lime slices, garnish


Grilled salmon filets, grilled chicken breasts, grilled halibut filets, grilled pork tenderloins

In a medium saute pan, heat butter. Add ginger and jalapeno pepper. Saute for 1 min. Add the peaches, sugar, orange juice and zest. Cook on low heat 2 min. or until sugar is melted and peaches are soft. Remove from heat and add tequila and cilantro. Serve over you choice of grilled meats with lime slices as garnish. Makes about 3 cups salsa.
