Steak Chipotle

1 smoked chipotle chile, sliced
1 tomato, finely diced
1/4 onion, finely diced
1/2 cup chicken stock
1 Tbl. fresh cilantro, chopped
pinch of salt
pinch of cumin
2 5-ounces flank steaks, pounded out
salt and pepper to taste
2 6-inch corn tortillas
1/4 cup jack cheese, grated

To make the chipotle salsa, combine the pepper, tomato, onion, chicken, stock, cilantro, salt and cumin and cook for 20 minutes over medium heat. Set aside.

Season the flank steaks with salt and pepper and cook in a heavy skillet to desired doneness. Remove the flank steaks from the pan, place the corn tortillas in the pan and cook until warmed. Place each flank steak on a warm tortilla, sprinkle with cheese, and place under the broiler until the cheese is melted. Remove from oven and serve with the chipotle salsa.
